Never-Fail Rolls

1 package yeast
1 ½ cups warm water
3 ¼ cups flour
½ teaspoon salt
1 9-ounce (Jiffy) cake mix, either yellow or white
melted butter

Dissolve yeast in warm water.  Mix in all ingredients except butter.  Do NOT knead.  Put in greased large bowl and let it rise until doubled or about 1 hour.  Punch down, divide into two, and roll out into two 12-inch circles.  Divide into 12 triangles each and roll into crescent rolls.  Put each dozen on greased cookie sheets and let rise about 25 minutes.  Bake at 350 degrees for 12-15 minutes or until browned.  Remove from oven and brush with melted butter.  These also freeze and reheat well so that you can make them ahead.  Makes 24 rolls.

 

Mexican Chicken Lasagna

½ cup finely chopped onion
2 14.5-ounce cans petite diced tomatoes, drained
1 ¼ cup mild picante sauce
1 package taco seasoning mix
16-ounce can black beans, drained and rinsed
2 large egg whites
1 cup ricotta cheese
10 lasagna noodles, uncooked
2 cups chopped, cooked chicken
4-ounce can diced mild green chile peppers
8-ounce package shredded sharp cheddar cheese

Mix first four ingredients in a large bowl.  Add beans, stirring lightly.  In a separate bowl, mix egg whites and ricotta cheese.  Spread 1 ½ cups of the bean sauce over the bottom of a greased 9-by-13 pan.  Top with five uncooked noodles, overlapping slightly.  Spread with half of the remaining sauce mixture.  Sprinkle with half the chiles followed by half the chopped chicken.  Spread ricotta mixture over chicken.  Sprinkle on half the cheese.  Add five more noodles, the rest of the sauce, chiles, chicken, and cheese, making sure noodles are well covered.  Bake uncovered at 350 degrees for 45-55 minutes until noodles are fully cooked.  Cool slightly before serving.  Top with sour cream, extra salsa, and chopped lettuce.  Serves 8-10.

All-purpose cleaner – Mix a quart (4 cups) of water, ¼ cup lemon juice, 1 teaspoon liquid dish soap, 1 tablespoon each of borax and baking soda.  Keep in a spray bottle and shake before using.  Works great on any hard surface such as counters, sinks, and appliances.

 

Shower cleaner – Heat full-strength white vinegar on the stove until it is warm but not too hot to pour into a bottle.  Place in bottle and spray on shower walls.  Let sit for a few minutes, scrub with a sponge, and rinse well.

 

Sink cleaner – Scrub with a sponge and a paste made from equal parts of salt and baking soda moistened with a little water.  Rinse well.  To give the drain a good cleaning, pour a generous amount of baking soda down the drain.  Next pour a little white vinegar down the drain and let bubble.  Throw a handful of ice cubes in and run the garbage disposal for a few seconds.
